I would like to personally thank Priscilla of La Pine Oregon for submitting this sweet and fruity banana butterscotch cookies recipe. To get started first you will need to take out a medium size mixing bowl. Next add into the bowl the baking soda, white all purpose baking flour, table salt, and fresh ground cinnamon. Sift this initial batch of ingredients together well. Next take out a second smaller mixing bowl, and then add in the superfine white sugar, dark brown sugar, and a stick of unsalted real butter. Using an electric mixer, whip this ingredient batch together until a creamy and even batter forms. Next add into that same bowl the egg and vanilla extract, then again beat these ingredients together using your electric mixer. Once you have an even and rich batter, you will want to gradually combine the ingredients in both mixing bowls. Beat the contents until a firm cookie dough forms. Finally you will want to add in the mashed fresh bananas and butterscotch chips, vigorously stirring the cookie dough until this last batch of ingredients is evenly dispersed. We are now moving on to the baking portion of the recipe, so please preheat your oven to 350 degrees Fahrenheit, or 175 degrees Celsius. Next take out a baking sheet, and then grease it with butter. Moving along, next drop clumps of the dough on to the cookie sheet, then slide the cookies into the oven to bake for eight to thirteen minutes. Once your cookies are done, place them on a wire wrack to cool. Serve them warm with a glass of herbal tea, or some warm coffee.
