A warm thank you to Cecilia for allowing us to publish this unique and delicious butterscotch refrigerator cookies recipe. To get the recipe started, first you will need to take out a small saucepan. Add into the pan the butterscotch flavored chips, and heat them over medium heat until they have completely melted. Be sure to stir continuously, as you do not want to burn the butterscotch. Next up, take out a mixing bowl, and pour in the melted butterscotch chips, chopped Planters honey roasted peanuts, white all purpose baking flour, dark brown sugar, pure vanilla extract, baking soda, butter, white superfine baking sugar, and the large whole fresh egg. Using an electric baking mixer, whip all of these ingredients together until you have a firm and even cookie dough. Next form the cookie dough into thick log shaped rolls, then wrap them each in wax baking paper. Slide the dough logs into the refrigerator to chill for at least two full hours. Once the dough has chilled, cut slices of the log, and place them on to a greased baking sheet. Heat your oven to 350 degrees Fahrenheit, or 175 degrees Celsius, then slide your cookies in to bake for ten minutes, or until the edges of the cookies start to turn golden brown.
